It's Monday - the kind of Monday that I had (happily) mistook for Thursday. But it's not Thursday. It's.Still.Monday. Ugh...Monday. I think I'll bake.

something that’s engrossing from beginning to end (the making and the eating),
something that has fruit in it (healthy!) and alcohol as well (because Monday),
something that’s flavourful and fun...

Prep time: 10 minutes, Cook time: 15-20 minutes
Serves: 8
Ingredients
  • ¾ cup (171 g) brown sugar
  • 2 ¼ tbsp (31.5 g) unsalted butter, room temperature
  • ¾ cup water
  • 2½ tsp vanilla extract
  • 3 cups (402 g) peaches, sliced
  • ¼ cup + 2 tbsp spiced rum (or maple syrup for an alcohol-free version)
  • Pinch of kosher salt
Instructions
Monday needs an upgrade...

Preheat the oven to 375°F.
Add the sugar and butter to a medium pot set over medium heat and stir. Cook for 2 minutes until the mixture comes together.
Reduce the heat to low before adding the water and vanilla. Cook for 5 minutes.
The scents filling the air are changing the mood already and it's completely irresistible.
Take the pot off the stove to add the rum, stir it well. Return the pot to the stove and cook for 3 minutes.
Add the peaches to the mixture, stirring gently, for 3 minutes until the peaches are nicely coated in the thick sauce.
That looks sooooo good!
Transfer the peach sauce to an oven-safe dish and bake for 5-7 minutes.
Remove the peach sauce from the oven and stir in the salt. Set aside to cool.
...this is a nice break from *Monday*.
Once the sauce has cooled down but is still warm, it's ready to eat. Serve immediately (preferably with french vanilla ice cream).
Dare I say, Monday just got better.
