These muffins are happy... and happiness is worth sharing. Especially when it’s fluffy, stuffed with chocolate chips, and puts the scent of a bakery in the air.

Prep time: 15 minutes, Bake time: 25-30 minutes
Makes: 12 muffins
Ingredients
  • 2 ¾ cup (426 g) all-purpose flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 3 tsp baking powder
  • 1 cup (226 g) granulated sugar
  • 1 cup (208 g) mini semi-sweet chocolate chips
  • 3/4 cup vegetable oil
  • 4 eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Instructions
It’s muffin time!!
Preheat the oven to 350°F (180°C).
In a medium bowl, sift the flour, salt, baking soda, baking powder, and sugar together. Stir in the chocolate chips until they’re coated in the flour mixture. Set aside.
In a small bowl, whisk the oil, eggs, buttermilk and vanilla together.
Pour the oil mixture into the dry ingredients and fold it together. Make sure it’s mixed well.
You got it!
Pour the batter evenly into each liner, filling each all the way to the top. Bake the muffins for 25-30 minutes. It’s ready when a skewer inserted into the middle comes out clean.
